Denmark is the world's largest exporter of pork and bacon
products and Danish pigmeat is enjoyed by consumers in over 130 countries. This
has given the Danish industry unique experience and expertise in meeting the
requirements of hundreds of customers around the world. The success has been
founded on well grounded quality systems in Danish factories and their ability
to adapt to detailed customer as well as legislative requirements.
For
the last decade, the Danish Quality Guarantee (DQG) has represented the baseline
for quality standards with the Danish pigmeat industry. The DQG covered each
stage of the production process from farm through to delivery to the end
customer. The DQG was based on 'good manufacturing practice' (GMP) and a 'mix'
of controls by the authorities and specific initiatives implemented by the
industry itself.
As customer and legislative requirements have evolved in
recent years, Danish Meat Association in co-operation with the Danish
co-operative slaughterhouses and the Danish Meat Research Institute have developed the Global
Red Meat Standard ('GRMS') to meet these requirements within a formally certified
system.
Objective
The objective of the GRMS is to deliver EN45011 certified standards for the slaughtering, cutting, boning and sales of meat and meat products where the production chain is subject to an independent audit system.
Application
The Standard will be applicable to all aspects of
transport, lairage, stunning, slaughtering, deboning, cutting and handling of
meat and meat products.
The Standard is a
fundamental requirement for all companies producing products carrying the 'Danish'
logo.
